This is the first year I have planted potatoe. How do I know when they are ready?

When the yellow blossoms appear on the plants, it will take about two weeks for the potatoes to start to form. After two weeks, you can run your hand into the soil and feel if there are some small potatoes forming. You can take a few potatoes at this early stage without too much problem to the plant. When the foliage dies down, the potatoes have fully formed in the ground. Make sure you mound the plants up so no potatoes are exposed to the light. Light turns them green, and they are then bordering on the poisonous and not good to eat. FRESH POTATOES ARE DELICIOUS!!!
