    Last year our carrots and beets did not do well and were bitter. Does anyone have any ideas what might be missing from our soil?

      I too have had this problem but I think I've solved it. The first year I was gardening the soil wasn't the richest on earth but I slowly corrected that. I live in an area that has lots of lime in the soil and I added some every year. Since the natural lime was probably sufficent I didn't need that lime. I also noticed that my carrots tend to be bitter in dry years and sweet in years thar aren't so dry, so make sure you give your plants plenty of water. Good luck!
