Posted by Tim on Wednesday, September 19, 2007 4:53 pm ADTYou can harvest Buttercup squash whenever the skin is hard enough that you can't cut it with your fingernail. Cut from the vine leaving 4-6 inches of stem attached to the fruit. Store in a cool, dry area.
