Totem Organic Belgium Endive
Excellent winter vegetable. Also known as Witloof Chicory. Belgian endive is grown in the summer, then the root is dug up in the fall and stored into the winter. When you want fresh greens through the winter, bring the roots to warmer area and they form perfect bright yellow chicons. They can be braised or used as a bitter green in salads. These 8 Inch roots store well which allows a long forcing window. Force from Sept-Jan. Approx. 100 seeds/pkg.
Sow seed in early spring, covering lightly with 1⁄8 inches of soil. Prefers a cool soil temperature for germination (4-13 degrees C). Sow thinly, 1 inch apart in rows or bands 3 inches apart. Plant every 2-3 weeks to ensure a constant supply.
Use an area with full sun to partial shade and soil pH of 6.0-7.0. Arugula will grow well in any rich garden soil.
Begin cutting leaves at 2 inches tall. Flowers are edible as well.

Flea beetles. Use row covers or interplant with taller companion vegetables to shelter or hide plants.
