Eggplant

Egglplants are commonly used in the famous Mediterranean stew called Ratatouille.  Eggplants love the heat and are grown in a similar way as peppers and tomatoes. They are chalked full of nutrition as are extremely versatile. Chop or slice in place of noodles in lasagna or simply add as a new addition to your favourite stirfry.
